Breads and Papadums Recipes - Banana Puri

Ingredients

  • 225g/8 oz plain (all-purpose) flour

  • 100g/4 oz gram flour

  • 5ml/1 tbsp chili powder

  • 1.5ml/1/4 tsp ground turmeric

  • 5ml/1 tsp cumin seeds

  • pinch of salt

  • 15ml/1 tbsp ghee plus extra for deep-frying

  • 3 ripe bananas

  • 5ml/1 tsp sugar


Method:

  1. Mix the flours, chili powder, turmeric, cumin and salt then knead in the ghee. Mash the bananas with the sugar, work into the flour mixture and knead until soft.

  2. Divide into 12 equal balls and roll then out into thin circles. Heat the ghee and deep-fry the puris until crisp and golden brown on both sides.
