Breads and Papadums Recipes - Garlic Paratha

Ingredients

  • 225g/8 oz whole-wheat flour plus extra for dusting

  • 5 cloves garlic, crushed

  • 5ml/1 tsp cardamom seeds

  • salt

  • 120ml/4 fl oz oil

  • 250ml/8 fl oz warm water, milk or butter milk


Method:

  1. Mix the flours, garlic, cardamom and salt. Add 15ml/1 tbsp of oil and the water or milk to make a dough. Knead for 10 minutes until smooth. Cover with damp cloth and leave to rest for 20 minutes. Divide the dough into 8 equal portions and roll out to a 18cm/7 in circle.

  2. Heat a frying pan (skillet) over a medium heat and brush with a little oil. Gently place the bread in the pan and fry for 2-3 minutes until golden brown and crisp. Turn over and brush with a little more oil and fry for a further 2-3 minutes. Remove and keep warm while you fry all the paratha.
