Leavened Puri
Ingredients

350g/12 oz plain (all-purpose)
flour
-
pinch of salt
-
30ml/2 tbsp ghee plus extra for
deep-frying
-
2.5ml/1/2 tsp bicarbonate of
soda (baking soda)

90ml/6 tbsp natural (pain)
yoghurt
-
warm water
Method:

Rub together the flour, salt
and ghee. Stir in the baking powder and yoghurt and
just enough water to make a pliable dough. Knead
until the dough is springy and does not stick to the
fingers. Cover with a damp cloth and leave overnight
in a warm place to rise.

Knead the dough again, divide
into 12 equal portions and form into thick rounds.
Heat the ghee and deep-fry the puris 2 at a time
until golden. Drain on kitchen paper then serve hot.
