Breads and Papadums Recipes - Onion Roti

Ingredients

  • 450g/1 lb whole wheat flour

  • 3 onions, finely chopped

  • 6 green chilies, finely chopped

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 1 spring fresh curry leaves, finely chopped

  • pinch of bicarbonate of soda (baking soda)

  • salt

  • 600ml/1pt water

  • ghee


Method:

  1. Mix the flour, onions, chilies, coriander, curry leaves, bicarbonate of soda and salt to taste. Gradually blend in enough water to make a batter just thick enough to pour. Lightly grease a frying pan (skillet) and add just enough batter to cover it thinly, spreading the batter with the back of a spoon, if necessary.

  2. Pour a little ghee around the edge to prevent sticking and fry until lightly browned on the underside. Flip over and brown the other side. Cook the remaining roti in the same way.
