Potato
Ingredients

4 medium potatoes, boiled,
peeled and mashed

30ml/2 tbsp chopped fresh
coriander (cilantro)

2.5ml/1/2 tsp basic garam
masala

1.5ml/1/4 tsp ground red chili
-
juice of 1/2 lemon
-
salt
-
225g/8 oz whole wheat flour
plus extra for dusting

175ml/6 fl oz warm water or
milk

45ml/3 tbsp oil
Method:

Mix together the potatoes,
coriander, garam masala, chili, lemon juice and salt
and divide into 8 equal portions. Mix together the
flour and salt then work in the water to make a firm
dough. Knead for 10 minutes until smooth. Cover with
a damp cloth and leave to stand for 20 minutes.

Divide the dough into 8 equal
balls and make holes in the centre. Fill with
stuffing then cover the filling evenly with dough.
Gently flatten each ball and roll out to 15cm/6 in
circles. Heat a frying pan (skillet) over a medium
heat an brush with a little oil.

Gently place 1 bread on the hot
pan and cook for 1 minute until golden brown. Turn
over, brush with a little more oil and cook for a
further 1 minute until browned and crisp. Keep warm
while you fry the remaining paratha.
