Breads and Papadums Recipes - Puri Stuffed with Green Beans

Ingredients

  • 50g/2 oz skinless dried green beans

  • 10ml/2 tsp oil

  • 5ml/1 tsp cumin seeds

  • pinch of garam masala

  • 2.5ml/1/2 tsp salt

  • pinch of chili powder

  • 225g/8 oz plain (all-purpose) flour

  • 5ml/1 tsp ghee plus extra for deep-frying

  • 150ml/1/4 pt warm water


Method:

  1. Soak the beans overnight. Drain off the water and grind the beans. Heat the oil and fry the cumin seeds and garam masala foe 2 minutes. Add the bean paste and stir in the salt and chili powder. Cook for 5 minutes over a medium heat, stirring constantly, until the moisture has evaporated. Remove from the heat.

  2. Mix the flour with the ghee and add enough water to make a pliable dough. Divide the dough into 8 equal balls and flatten them slightly.

  3. Place a portion of the filling on each one, roll into a ball then flatten again to 7.5cm/3 in rounds. Heat the ghee and deep-fry two puris at a time until golden. Drain on kitchen paper and serve hot.
