Breads and Papadums Recipes - Puri

Ingredients

  • 225g/8 oz plain (all-purpose) flour

  • pinch of salt

  • 175ml/6 fl oz water

  • ghee for deep-frying


Method:

  1. Reserve a little flour for dredging. Mix the rest with the salt and gradually add enough water to make a stiff dough. Divide the dough into 8 equal balls and roll them into thin circles.

  2. Heat the ghee in a pan and deep-fry the puris 2 at a time. Drain on kitchen paper and serve hot or store in an air-tight container.
