Savoury Puri
Ingredients

225g/8 oz plain (all-purpose)
flour
-
pinch of salt
-
5ml/1 tsp cumin seeds
-
5ml/1 tsp black pepper
-
1 clove garlic
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
-
5 green chilies
-
15ml/1 tbsp ghee plus extra for
deep-frying
-
150ml/1/4 pt warm water
Method:
-
Mix the flour, salt, cumin
seeds and pepper. Grind the garlic, coriander and
chilies together and stir into the flour with ghee.

Mix in just enough water to make a firm dough.
Divide the dough into 8 equal portions and roll out
to thin circles. Heat the ghee and deep-fry the puris until golden brown.
