Breads and Papadums Recipes - Savoury Puri

Ingredients

  • 225g/8 oz plain (all-purpose) flour

  • pinch of salt

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp black pepper

  • 1 clove garlic

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 5 green chilies

  • 15ml/1 tbsp ghee plus extra for deep-frying

  • 150ml/1/4 pt warm water


Method:

  1. Mix the flour, salt, cumin seeds and pepper. Grind the garlic, coriander and chilies together and stir into the flour with ghee.

  2. Mix in just enough water to make a firm dough. Divide the dough into 8 equal portions and roll out to thin circles. Heat the ghee and deep-fry the puris until golden brown.
