Breads and Papadums Recipes - Spiced Rice Papadums

Ingredients

  • 225g/8 oz rice flour

  • 600ml/1 pt water

  • 2.5ml/1/2 tsp salt

  • pinch of ground cumin

  • 2.5ml/1/2 tsp bicarbonate of soda (baking soda)


Method:

  1. Put all the ingredients into a bowl and whisk thoroughly to a smooth batter. Transfer to a pan and bring to the boil over a medium heat. Lower the heat and continue cooking.

  2. Remove 15ml/1 tbsp of the mixture and spread it over a greased metal plate then place the plate on top of the pan as a lid.

  3. The mixture will soon firm up into a disc. Remove the disc and place it on a greased plastic sheet to dry out. Continue to make the papadums in the same way. Store in an airtight container. Deep-fry as Potato Papadums.
