Whole Wheat Puri
Ingredients

225g/8 oz whole wheat flour
plus extra for dredging

100g/4 oz plain (all-purpose)
flour
-
salt
-
750ml/1 1/4 pts oil

250ml/8 fl oz warm water, milk
or buttermilk
Method:

Mix the flours, salt, 30ml/2
tbsp of the oil and water, milk or buttermilk to
make a firm dough. Knead for 10 minutes until
smooth. Cover with a damp cloth and leave to rest
for 20 minutes.

Divide the dough into 12 equal
balls and coat them with flour. Roll out to 15cm/6
in circles. Heat the remaining oil in a wok over a
high heat. When the oil is hot, gently drop in 1
puri. The puris will sink to the bottom.

Hold a spatula over the bread
for a few seconds to help it cook then gently press
the bread for a few seconds to help it puff up. Once
it starts to puff, cook for about 15 seconds then
turn it over and cook for a further 10-15 seconds.
Drain on kitchen paper while you cook the remaining
puris.
