Ingredients

  • 100g/4 oz blanched almonds

  • 2l/3 1/2 pts milk

  • 100g/4 oz sugar

  • seeds from 4 cardamom pods, crushed

  • 5ml/1 tsp ground saffron

  • 5ml/1 tsp grated nutmeg

 


Method:

  1. Soak the almonds in hot water for 2 hours. Grind to a fine paste. Boil the milk until it reduced by a quarter.

  2. Add the remaining ingredients and simmer for 5 minutes, stirring. Pour into a greased dish and chill.
