Indian Recipes - Almond Payasam Indian Recipe
Ingredients
100g/4 oz blanched almonds
2l/3 1/2 pts milk
100g/4 oz sugar
seeds from 4 cardamom pods, crushed
5ml/1 tsp ground saffron
5ml/1 tsp grated nutmeg
Method:
Soak the almonds in hot water for 2 hours. Grind to a fine paste. Boil the milk until it reduced by a quarter.
Add the remaining ingredients and simmer for 5 minutes, stirring. Pour into a greased dish and chill.
