Ingredients

  • 225g/8 oz mashed potatoes

  • 50g/2 oz full-cream milk powder

  • 50g/2 oz semolina

  • 2.5ml/1/2 tsp ground cardamom

  • 45ml/3 tbsp milk

  • ghee and oil for frying

  • 225g/8 oz sugar

  • 200ml/7 fl oz water

  • 5ml/1 tsp rose water


Method:

  1. Mix together the potatoes, milk powder, semolina, cardamom and milk to a soft dough. Cover and leave for 30 minutes. Divide the dough into 20 portions and roll into sausage shapes.

  2. Heat equal quantities of oil and ghee and fry the jamun over a medium heat until golden brown, turning frequently. Do not fry them too quickly or they will not be cooked through. Remove with a slotted spoon and cool.

  3. Meanwhile, bring the sugar and the water over a medium heat, stirring until the sugar dissolves. Remove from the heat and add the jamun to the syrup.

  4. Return to the boil, reduce the heat and simmer for 5 minutes. Remove from the heat and stir in the rose water, shaking the pan to coat the jamun in syrup. Serve hot or cold.
