Ingredients

  • 75g/3 oz ghee

  • 675g/1 1/2 lb plain (all-purpose) flour

  • 900g/2 lb sugar

  • 300ml/1/2 pt

  • ghee for deep frying


Method:

  1. Rub the ghee into the flour then add enough water to make a soft dough. Divide into small balls, flatten slightly and make dents in the centre.

  2. Boil the sugar and water to make a thick syrup. Heat the ghee and add the balushahi. Remove the pan from the heat until the ghee stops simmering.

  3. Return to the heat and bring back to the boil. Repeat this process until the balushahi are well risen and layers appear.

  4. Use a slotted spoon to transfer the balushahi into a bowl and pour over the hot syrup. Shake well to cover well then leave to cool.
