Banana Jalebis
Ingredients

3.5kg/4 lb cooking bananas
-
30ml/2 tbsp ghee
-
900g/2 lb sugar
-
250ml/8 fl oz water
-
juice of 2 lemons
-
pinch of saffron, soaked in
water

oil or ghee for deep-frying
Method:

Halve the bananas lengthways
without removing the skin then boil in a little
water until tender. Leave to cool then remove the
skins.

Chop the bananas to a thick paste, adding a
little bananas to a thick paste, adding a little
water if necessary. Boil the sugar and water to form
a syrup then add the lemon juice and strain.

Stir in
the saffron. Heat the ghee. Place the dough in a
piping bag and pipe into the hot ghee in small
spirals.

Fry until golden then remove from the ghee
and place in the syrup to soak for 5-10 minutes.
