Ingredients
2.8l/5 pts milk
100g/4 oz sugar
5ml/1 tsp ground cardamom
2.5ml/1/2 tsp ground saffron
30ml/2 tbsp chopped pistachios
Method:
Boil the milk in a heavy-based pan until it is reduced to one-third of the quantity.
Add the sugar and simmer for 5 minutes. Add the cardamom and saffron and pour into a bowl. Garnish with the pistachios and serve chilled.
