Desserts and Sweets Recipes - Basundi

Ingredients

  • 2.8l/5 pts milk

  • 100g/4 oz sugar

  • 5ml/1 tsp ground cardamom

  • 2.5ml/1/2 tsp ground saffron

  • 30ml/2 tbsp chopped pistachios


Method:

  1. Boil the milk in a heavy-based pan until it is reduced to one-third of the quantity.

  2. Add the sugar and simmer for 5 minutes. Add the cardamom and saffron and pour into a bowl. Garnish with the pistachios and serve chilled.
