Desserts and Sweets Recipes - Carrot and Cashew Payasam

Ingredients

  • 50g/2 oz cashew nuts

  • 225ml/8 fl oz warm milk

  • 1.5l/2 1/2 pts milk

  • 30ml/2 tbsp ghee

  • 225g/8 oz carrots, grated

  • 100g/4 oz sugar

  • seeds from 6 cardamom pods, crushed


Method:

  1. Soak the cashew nuts in the warm milk for 30 minutes. Boil the remaining milk in a heavy-based pan until reduced to half the quantity.

  2. Meanwhile, heat the ghee and fry the carrots for 5 minutes. Grind to a paste with the soaked nuts.

  3. Add the paste to the milk with the sugar and cardamom and simmer until blended. Turn into a dish and leave to cool.
