Ingredients

50g/2 oz cashew nuts
-
225ml/8 fl oz warm milk
-
1.5l/2 1/2 pts milk
-
30ml/2 tbsp ghee
-
225g/8 oz carrots, grated
-
100g/4 oz sugar
-
seeds from 6 cardamom pods,
crushed
Method:

Soak the cashew nuts in the
warm milk for 30 minutes. Boil the remaining milk in
a heavy-based pan until reduced to half the
quantity.

Meanwhile, heat the ghee and fry the
carrots for 5 minutes. Grind to a paste with the
soaked nuts.

Add the paste to the milk with the
sugar and cardamom and simmer until blended. Turn
into a dish and leave to cool.
