Carrot Halwa
Ingredients

900g/2 lb carrots, grated
-
600ml/1 pt milk
-
200g/7 oz sugar
-
60ml/4 tbsp ghee
-
50g/2 oz blanched almonds,
halved
-
50g/2 oz sultanas
-
25g/1 oz pistachios, halved
-
150g/5 oz Khoya
-
5ml/1 tsp ground cardamom
Method:

Place the carrots and milk in a
heavy-based pan and bring to the boil over a high
heat.

Reduce the heat to medium and simmer until
all the milk has been absorbed, stirring
occasionally.

Add the sugar and continue to simmer
until the liquid has been absorbed. Pour in the ghee
and cook gently for 10 minutes.

Stir in the nuts, khoya and cardamom and simmer for 5 minutes. Serve
hot.
