Carrot and Honey Halwa
Ingredients

2.4l/6 pts milk
-
450g/1 lb light brown sugar
-
100g/4 oz margarine
-
50g/2 oz flaked almonds
-
50g/2 oz pistachios, chopped
-
1.5kg/3 lb carrots, grated
-
100g/4 oz clear honey
-
10ml/2 tsp ground cardamom
Method:

Boil two-thirds of the milk
with the sugar for 20 minutes until reduced to
one-quarter of the original quantity, stirring
continuously. Lower the heat and simmer for about 1
hour, stirring continuously, until the thick becomes
a thick, creamy and leave to cool.

Heat the margarine and fry the
almonds and pistachios until lightly browned. Add
the carrots, cover and cook for 10-12 minutes until
tender.

Add the milk fudge and remaining milk and
simmer for 20-30 minutes, stirring occasionally,
until the milk has been absorbed and the halwa is
moist.

Add the honey and cardamom and
stir until the sugar has dissolved and the carrots
are glazed and sticky. Cook for 2-3 minutes,
stirring continuously. The halwa should be thick.

Pour into a lightly greased platter and leave to
cool then cut into 5cm/2 in squares. Serve hot or
cold.
