Carrot Kheer
Ingredients

2.5ml/1/2 tsp saffron threads
-
1l/1 3/4 pts milk

225g/8 oz sugar
-
1.5ml/1/4 tsp ground cardamom
-
25g/1 oz flaked almonds

25g/1 oz margarine
-
1.5kg/3 lb carrots, grated
Method:

Soak the saffron in 60ml/4 tbsp
of hot milk. Boil the remaining milk, sugar,
cardamom, almonds and margarine over a medium heat
for 5-6 minutes, stirring occasionally.

Add the
carrots and mix thoroughly. Simmer for a further 20
minutes until the mixture thickens and the carrots
are glazed and sticky.

Pour the saffron milk over
the mixture and stir for 2 minutes. Serve warm or
cold.
