Desserts and Sweets Recipes - Carrot Murabha

Ingredients

  • 450g/1 lb carrots, sliced

  • 450g/1 lb sugar

  • 4 cloves

  • 2 cinnamon sticks

  • 2 cardamom pods

  • 300ml/1/2 pt water


Method:

  1. Cook the carrots in boiling water until tender. Drain, reserving the water.

  2. Add the sugar, cloves, cinnamon to the water and boil to a thick syrup. Remove and discard the whole spices.

  3. Add the carrots and boil again until the syrup is thick again. Leave to stand overnight. Boil again if the syrup thins down too much. Serve cold.
