Desserts and Sweets Recipes - Cashew Fudge

Ingredients

  • 225g/8 oz cashew nuts

  • 1.2l/2 pts milk

  • 225g/8 oz light brown sugar

  • 2.5ml/1/2 tsp ground cardamom

  • 15ml/1 tbsp margarine


Method:

  1. Soak the nuts in boiling water for 1 hour then drain. Puree with 250ml/8 fl oz of the milk.

  2. Heat the remaining milk with the sugar, cardamom and margarine over a medium heat for about 15 minutes, stirring continuously, until the sugar has dissolved and mixture is thick.

  3. Add the cashew paste and mix thoroughly. Cook over a low heat for 4-5 minutes, stirring, until the mixture is thick and sticky.

  4. Spread evenly in a greased baking tray and leave to cool. Cut into squares to cool.
