Desserts and Sweets Recipes - Cashew Nut Halwa

Ingredients

  • 350g/12 oz cashew nuts, soaked in cold water

  • 1 coconut, grated

  • 675g/1 1/2 lb sugar

  • 120ml/4 fl oz water

  • 15ml/1 tbsp ghee

  • few drops of vanilla essence (extract)


Method:

  1. Drain the nuts then grind to a paste with the coconut. Boil the sugar and water for about 5 minutes until it forms a thick syrup.

  2. Add the paste, ghee and vanilla essence and mix over a low heat until the mixture is semi-solid. Spread into a greased baking tray and cut into shapes.
