Ingredients

  • 450g/1 lb cauliflower florets, grated

  • 600ml/1 pt milk

  • 5ml/1 tsp ground cardamom

  • 225g/8 oz sugar

  • 50g/2 oz flaked almonds

  • 50g/2 oz raisins

  • 50g/2 oz desiccated (shredded) coconut

  • 50g/2 oz pistachios, chopped


Method:

  1. Bring the cauliflower, milk and cardamom to the boil and simmer until the milk thickens.

  2. Add the sugar, almonds, raisins and coconut and simmer for 10 minutes. Pour into a bowl and serve sprinkled with the pistachios.
