Cauliflower Kheer
Ingredients

450g/1 lb cauliflower florets,
grated
-
600ml/1 pt milk
-
5ml/1 tsp ground cardamom
-
225g/8 oz sugar
-
50g/2 oz flaked almonds
-
50g/2 oz raisins
-
50g/2 oz desiccated (shredded)
coconut
-
50g/2 oz pistachios, chopped
Method:
-
Bring the cauliflower, milk and
cardamom to the boil and simmer until the milk
thickens.
-
Add the sugar, almonds, raisins and
coconut and simmer for 10 minutes. Pour into a bowl
and serve sprinkled with the pistachios.
