Channa Dal Kheer
Ingredients
Method:
-
Cook the split peas in boiling
water about 20 minutes until tender. Meanwhile, take
a small piece of coconut and chop it.

Grind the
remaining coconut and pour over 300ml/1/2 pt of hot
water then squeeze to extract the thick milk. Repeat
twice more.

When the peas are almost
tender, add the thin coconut milks and the jaggery
and simmer for 20 minutes until well cooked. Leave
to cool for 5 minutes.

Stir in the thick coconut
milk. Fry the coconut bits in the ghee until browned
then stir into kheer with the cardamom. Serve cold.
