Ingredients

100g/4 oz full-cream milk
powder
-
75g/5 tbsp double (heavy)
cream, whipped

20ml/1 1/2 tbsp ghee
-
1.5ml/1/4 tsp ground cardamom
-
75g/3 oz desiccated (shredded)
coconut
-
75g/3 oz sugar
-
2.5ml/1/2 tsp yellow food
coloring

50ml/2 fl oz water
-
100g/4 oz milk chocolate
Method:

Mix together the milk powder,
whipped cream, 5ml/1 tsp of ghee and the cardamom.
Fry the coconut and 15ml/1 tbsp of ghee over a low
heat until lightly browned.

Stir in the milk
mixture. Put the sugar, remaining ghee, food color
and water in a separate pan, bring to the boil then
boil for 2-3 minutes until it is ready to set. A
drop in cold water will set and stay at the bottom.

Pour the syrup into the milk,
remove from the heat and stir until smooth and cold.
Shape the mixture into a ball and flatten it on a
greased plate to about 1cm/1/2 in thick.

Melt the
chocolate and pour it over the barfi then leave to
set for 3-4 hours. Cut into squares or diamonds and
serve cold after a meal or a tea.
