Desserts and Sweets Recipes - Coconut Fudge

Ingredients

  • 250ml/8 fl oz milk

  • 30ml/2 tbsp, margarine

  • 450g/1 lb/2 cups sugar

  • 1 coconut, grated (shredded)

  • 5ml/1 tsp ground cardamom


Method:

  1. Bring the milk and margarine to the boil over a medium heat.

  2. Stir in the sugar, coconut and cardamom and cook, stirring continuously for 8 minutes until the coconut is thick and glazed.

  3. Spread evenly in a flat baking tray and leave to cool. Cut into square to serve.
