Colored Halwa
Ingredients

50g/2 0z corn flour
(cornstarch)
-
750ml/1 1/4 pts water
-
100g/4 oz sugar
-
2.5ml/1/2 tsp green, pink or
yellow food color
-
90ml/4 tbsp ghee
-
50g/2 oz blanched almonds,
halved
-
25g/1 oz cashew nuts, halved
-
25g/1 oz pistachios, halved
-
2.5ml/1/2 tsp ground cardamom
Method:

Dissolve the corn flour in the
water then mix wit the sugar and food color and stir
over a medium heat until the mixture thickens and
becomes transparent.

Add 30ml/2 tbsp of ghee and
stir for 2 minutes. Stir in the remaining ghee, the
nuts and cardamom and stir for a further 5 minutes
until the mixture comes away from the base of the
pan.

Remove from the heat and spread the mixture
about 2.5cm/1 in thick on a greased plate. Leave to
set for 3-4 hours then cut into 2.5cm/1 in squares.
