Desserts and Sweets Recipes - Creamy Pumpkin Halwa

Ingredients

  • 1 large ripe pumpkin

  • 300ml/1/2 pt milk

  • 100g/4 oz ghee

  • 225g/8 oz Khoya

  • 450g/1 lb sugar

  • pinch of ground saffron

  • few drops of rose water

  • 100g/4 oz blanched almonds, chopped

  • 100g/4 oz pistachios, chopped

  • 100g/4 oz pumpkin seeds, chopped

  • 600ml/1 pt double (heavy) cream


Method:

  1. Remove the seeds and pith and grate the pumpkin flesh. Put into a pan wit the milk and simmer gently until the milk is absorbed.

  2. Heat the ghee in a large pan and fry the mixture until it turns reddish in color. Add the sugar and khoya and fry gently until the sugar has dissolved and the mixture is thick.

  3. Pour into a large dish and spread evenly. Sprinkle with saffron, rose water, nuts and seeds. Whisk the cream and make an oven pattern of dollops over the top.

  4. Leave to cool then cut into squares so you have a dollop of cream on each piece.
