Falooda
Ingredients

50g/2 oz corn flour
(cornstarch)
-
300ml/1/2 pt water
-
25g/1 oz sugar
-
5ml/1 tsp kewra essence
(extract) or rose water
-
1.5ml/1/4 tsp red, yellow or
green food coloring (optional)

crushed ice or ice-cream
Method:

Place a colander over a bowl of
ice cold water. Mix the corn flour and 250ml/8 fl oz
water in a pan and bring to the boil, stirring
constantly, until the mixture is thick and
transparent.

Remove from the heat and place in a
pasta machine to make long ribbons, placing them in
the colander. Alternatively, roll out and cut into
ribbons. Leave for 3-4 hours then drain.

Meanwhile dissolved the sugar
in the remaining water over a medium heat. Leave to
cool then add the essence or rose water and the food
coloring.

To serve, half fill glasses with crushed
ice or ice cream then fill with the falooda. Pour
over the cold syrup and eat with spoon.
