Ingredients

  • 450g/1 lb ghee

  • 100g/4 oz gram flour

  • 450g/1 lb sugar


Method:

  1. Melt half the ghee then stir in the gram flour until well blended. Place the sugar into a heavy-based pan and just cover with water.

  2. Boil to a thick syrup then strain to remove the scum. Melt the remaining ghee. Stir the flour mixture into the syrup and stir over a low heat, gradually adding the melted ghee.

  3. Stir over a low heat until the ghee appears on the surface and the mixture froths up.

  4. Pour quickly on to a greased baking sheet and leave to cool slightly. Cut into pieces. Leave to cool completely then store in an airtight container.
