Desserts and Sweets Recipes - Kalkass

Ingredients

  • 1 coconut

  • 150g/5 oz plain (all-purpose) flour

  • 100g/4 oz ghee

  • 450g/1 lb sugar

  • 300ml/1/2 pt water

  • 5ml/1 tsp ground cardamom


Method:

  1. Grate the coconut and grind the flesh. Reserve the milk. Mix the coconut milk with the flour and knead to soft dough, with a little extra water if necessary.

  2. Roll marble-sized pieces of dough into balls then flatten with a fork. Heat the ghee and fry the rolls until golden brown.

  3. Meanwhile, boil the sugar and water until it forms a syrup. Place the fried balls in a bowl and pour over the hot syrup.

  4. Shake the bowl so that the syrup covers the rolls. Sprinkle with cardamom and leave to cool.
