Ingredients

1.75l/3 pts milk
-
25g/1 oz patna or basmati rice
-
60ml/4 tbsp sugar
-
25g/1 oz sultanas
-
25g/1 oz blanched almonds,
finely chopped
-
12 pistachios, chopped
-
2.5ml/1/2 tsp ground cardamom
-
1.5ml/1/4 tsp ground saffron
-
5ml/1 tsp rose or kewra water
Method:
-
Bring the milk to the boil then
reduce the heat to medium-low, add the rice and
simmer for 1 hour, stirring occasionally.

Mix in
half the nuts, the cardamom and saffron and simmer
gently for 45 minutes or until the rice is at the
desired consistency.

Remove from the heat and mix in
the rose or kewra water. Serve hot sprinkled with
the remaining nuts.
