Desserts and Sweets Recipes - Labanga Latika

Ingredients

  • 225g/8 oz sugar

  • 600ml/1 pts water

  • 225g/8 oz plain (all-purpose) flour

  • 24 cloves

  • 100g/4 oz ghee

Filling

  • 600ml/1 pt milk

  • 50g/1/4 sugar

  • 25g/1 oz raisins

  • 5ml/1 tsp ground cardamom

 


Method:

  1. Boil the sugar and water to a thick syrup. Add just enough water to the flour to make a stiff dough. Roll the dough into 10-12 small balls and press them flat.

  2. To make the filling, boil the milk and sugar until it forms lumps. Add the raisins and cardamom and mix well.

  3. Place spoonfuls of the filling on the balls then shape them over to cover the filling and make small rectangles. Stick a clove on either side to keep them closed.

  4. Heat the ghee and fry over a low heat until crisp and golden. Drain and arrange on a serving plate. pour over the syrup and serve cold.
