Ingredients
Method:
-
Boil the sugar and water until
it forms a thick syrup. Stir in the saffron and
cardamom and set aside. Add enough water to the
flour to make a thick batter of dropping
consistency.

Heat the frying oil. Drop a ladleful of
batter through a draining spoon with pea sized holes
into the oil and fry until crisp.

Add to the sugar syrup and
continue to fry the remaining batter. Melt the ghee
and fry the nuts and raisins.

Add the syrup with the
sugar diamonds and mix well. Leave to cool then
shape into small balls.
