Ingredients

6 cooking bananas
-
30ml/2 tbsp butter
-
2 eggs
-
150ml/1/4 pt milk
-
50g/2 oz sugar
-
15ml/1 tbsp ground almonds
-
225g/8 oz grated (shredded)
coconut
-
15ml/1 tbsp raisins
-
few drops of vanilla essence
(extract)
-
12 cloves
Method:

Steam the bananas in their
skins until soft. Peel them and arrange them in a
flat dish. Cut in half lengthways and remove the
seeds.

Mash to a smooth dough with a little butter
then shape into 12 balls. Beat the eggs with the
milk, sugar and almonds. Stir in the coconut and
raisins to blend well and add the vanilla essence.

Melt a little butter and
scramble the egg mixture until frothy. Flatten the
banana balls, pile a teaspoon of the egg mixture in
the centre then shape the banana around the filling.

Stick a clove in the top of each ball and chill them
overnight. Serve cold with cream or dip in batter
and fry in hot ghee and serve hot.
