Desserts and Sweets Recipes - Mallpuha

Ingredients

  • 25g/1 oz full-cream milk powder

  • 25g/1 oz plain (all-purpose) flour

  • 120ml/4 fl oz lukewarm water

  • 6 blanched almonds, finely chopped

  • 6 pistachios, finely chopped

  • 2.5ml/1/2 tsp ground cardamom

  • 25g/1 oz sugar

  • 50ml/2 fl oz water

  • ghee and oil for frying


Method:

  1. Mix together the milk powder and flour. Gradually mix in the water to form a smooth batter. Mix in the nuts and cardamom.

  2. Bring the sugar and water to the boil then simmer until the sugar has dissolved. Remove from the heat. Heat 10ml/2 tsp of oil and ghee in a frying pan (skillet).

  3. Spread 15ml/1 tbsp of batter thinly in the pan and cook for 1 minute. Turn it over, pour a further 10ml/2 tsp of oil around it and cook until golden brown.

  4. Dip in the syrup and place on a serving plate. Cook the remaining mallpuha in the same way and serve hot or cold as a dessert.
