Mallpuha
Ingredients

25g/1 oz full-cream milk powder
-
25g/1 oz plain (all-purpose)
flour
-
120ml/4 fl oz lukewarm water
-
6 blanched almonds, finely
chopped
-
6 pistachios, finely chopped
-
2.5ml/1/2 tsp ground cardamom
-
25g/1 oz sugar
-
50ml/2 fl oz water
-
ghee and oil for frying
Method:

Mix together the milk powder
and flour. Gradually mix in the water to form a
smooth batter. Mix in the nuts and cardamom.

Bring the sugar and water to
the boil then simmer until the sugar has dissolved.
Remove from the heat. Heat 10ml/2 tsp of oil and
ghee in a frying pan (skillet).

Spread 15ml/1 tbsp of batter
thinly in the pan and cook for 1 minute. Turn it
over, pour a further 10ml/2 tsp of oil around it and
cook until golden brown.

Dip in the syrup and place on a
serving plate. Cook the remaining mallpuha in the
same way and serve hot or cold as a dessert.
