Malpuras
Ingredients

350g/12 oz plain (all-purpose)
flour
-
350g/12 oz semolina
-
350g/12 oz sugar
-
2.5ml/1/2 tsp ground cardamom
-
1.2l/2 pts natural (plain)
yoghurt
-
pinch of ground saffron
-
30ml/2 tbsp ghee
Method:

Blend all the ingredients
except the ghee to make a ticklish batter. Cover and
leave to stand overnight.

Mix the batter again and add a
further 75g/3 oz/1/2 cup of semolina and mix well.

Heat the ghee and drop
tablespoonfuls of the batter into it. When the edges
begin to brown, turn them over and cook the other
side.

Drain well and leave to cool.
The edges should be crisp and the centers soft.
