Marrow Halwa
Ingredients

1 large marrow (squash)
-
600ml/1 pt milk
-
100g/4 oz ghee
-
450g/1 lb sugar
-
225g/8 oz Khoya
-
2.5ml/1/2 tsp ground saffron
-
600ml/1 pt double (heavy)
cream, whipped

50g/2 oz blanched almonds or
pistachios, chopped
Method:

Peel the marrow, halve it and
remove the seeds. Grated into a large pan, add the
milk then boil until the milk is absorbed and the
marrow is tender, adding a little water if
necessary.

Heat the ghee and fry the cooked marrow
with the sugar, khoya and saffron over a low heat
until the mixture forms a thick mass.

Pour into a
flat dish and spread evenly. Pour over a cream and
sprinkle with nuts and cut into square to serve.
