Desserts and Sweets Recipes - Marrow Halwa

Ingredients

  • 1 large marrow (squash)

  • 600ml/1 pt milk

  • 100g/4 oz ghee

  • 450g/1 lb sugar

  • 225g/8 oz Khoya

  • 2.5ml/1/2 tsp ground saffron

  • 600ml/1 pt double (heavy) cream, whipped

  • 50g/2 oz blanched almonds or pistachios, chopped


Method:

  1. Peel the marrow, halve it and remove the seeds. Grated into a large pan, add the milk then boil until the milk is absorbed and the marrow is tender, adding a little water if necessary.

  2. Heat the ghee and fry the cooked marrow with the sugar, khoya and saffron over a low heat until the mixture forms a thick mass.

  3. Pour into a flat dish and spread evenly. Pour over a cream and sprinkle with nuts and cut into square to serve.
