Ingredients

450g/1 lb sugar
-
300ml/1/2 pt water
-
450g/1 lb gram flour
-
675g/1 1/2 lb ghee
-
pinch of ground cardamom
Method:

Boil the sugar an water to a
thick syrup. Add 90ml/6 tbsp of ghee then the gram
flour and remaining ghee and stir over a medium heat
until the ghee appears on the surface, stirring
continuously.

Pour on to a greased flat dish
and sprinkle with cardamom. Leave to cool then cut
into 2.5cm/1 in squares.
