Desserts and Sweets Recipes - Nut Halwa

Ingredients

  • 1.5kg/3 lb peanuts

  • 450g/1 lb sugar

  • 2.5ml/1/2 tsp ground cardamom

  • pinch of ground saffron

  • 50g/2 oz raisins

  • 900g/2 lb ghee

  • 150g/5 oz cashew nuts, chopped


Method:

  1. Soak the nuts in water for 1 hour. Drain, peel and grind to a thick liquid. Bring the paste to the boil and simmer until reduced to half the quantity.

  2. Add the remaining ingredients except the cashew nuts and simmer, stirring constantly, until the mixture thickens.

  3. Turn out on to a greased dish and garnish with the cashew nuts. Serve hot or cold , cut into cubes.
