Parsi Rava
Ingredients

175g/6 oz blanched almonds
-
100g/4 oz pistachios
-
100g/4 oz raisins
-
100g/4 oz ghee
-
2.25l/4 pts milk
-
225g/8 oz sugar
-
225g/8 oz semolina
-
2.5ml/1/2 tsp grated nutmeg
-
2.5ml/1/2 tsp ground cardamom
-
45ml/3 tbsp rose water
Method:

Soak the almonds, pistachios
and raisins in hot water until soft then drain and
slice. Heat 15ml/1 tbsp of ghee and fry the nuts and
raisins for 2 minutes.

Boil 1.2l/2 pts of milk until
reduced by half. Boil the remaining ghee in a
large pan and fry the semolina over a low heat for 3
minutes, stirring continuously.

Add the thickened milk then the
sweetened milk, stirring all the time. Add the
nutmeg, cardamom and rose water then stir in half
the nuts and raisins. Continue to cook until thick.

Turn out on to a flat dish and garnish with the
reserved nuts and raisins. Cut into squares and
serve warm.
