Ingredients

  • 175ml/6 fl oz pineapple juice

  • 15ml/1 tbsp arrowroot

  • 60ml/4 tbsp clear honey

  • few drops of kewra or rose water

  • 1 pineapple, sliced

  • 2 apples, cored and sliced

  • 2 bananas, sliced

  • 30ml/2 tbsp raisins

  • 30ml/2 tbsp pine nuts, chopped

  • 15ml/1 tbsp lemon juice

  • 50g/2 oz strawberries

  • 120ml/4 fl oz soured (dairy sour) cream


Method:

  1. Bring the pineapple juice to a boil. Mix the arrowrrot and honey and stir into the juice. Simmer for 15 minutes.

  2. Add the kewra or rose water and simmer for 3 minutes then pour into a large bowl.

  3. Add the prepared fruit to the juice then gently stir in the raisins, pine nuts and lemon juice.

  4. Cover and refrigerator for about 2 hours, stirring occasionally.

  5. Stir in the strawberries and serve with a dollop of soured cream.
