Potato Halwa
Ingredients

450g/1 lb potatoes, peeled and
grated
-
450g/1 lb shelled peas
-
175g/6 oz sugar
-
250ml/8 fl oz water
-
100g/4 oz ghee
-
225g/8 oz chopped mixed nuts
-
50g/2 oz raisins
-
5ml/1 tsp ground cardamom
-
few silver leaves for garnish
Method:

Place the potatoes in a pan,
just cover with water, bring to the boil and simmer
for a few minutes. Drain off the water. Boil the
peas in water until tender then drain and mash
coarsely.

Put the sugar in a pan, add the water and
boil for about 5 minutes to a thick syrup. Heat a
little ghee and fry the nuts until lightly browned.

Heat the remaining ghee and fry
the potatoes and peas for 5 minutes. Add the syrup
and cook, stirring, for 15 minutes. Stir in the
nuts, raisins and cardamom and serve warm, garnished
with silver leaves.
