Desserts and Sweets Recipes - Pudalamboo

Ingredients

  • 225g/8 oz split black beans

  • 50g/2 oz cashew nuts, ground

  • 5ml/1 tsp ground cardamom

  • 600ml/1 pt coconut milk

  • 450g/1 lb sugar

  • oil for deep-frying


Method:

  1. Soak the split beans in water for 1 hour then drain well and grind to a paste with a little water. Stir in the cashew nuts and cardamom. Mix together the coconut milk and sugar.

  2. Shape the bean paste into small balls. Heat the oil and fry the balls until golden brown. Place in the coconut milk and leave to soak for 1 hour before serving.
