Ingredients

450g/1 lb yellow split peas
-
450g/1 lb sugar
-
seeds from 12 cardamom pods,
ground

4 cloves
-
450g/1 lb plain (all-purpose)
flour

ghee
Method:
-
Boil the split peas in water
until tender and the water has been absorbed. Add
the sugar and simmer until the sugar has dissolved.
Add the cardamom and cloves and simmer until it
forms a thick syrup.

Meanwhile, sift the flour and
mix in about 10 ml/2 tsp of ghee. Add just enough
water to mix to a thick dough then knead well and
divide into 5cm/2 in balls.

Grind the pea mixture to a
thick paste and roll into the same number of balls
as you have dough balls. The pea balls should
be twice the size of the dough balls.

Flatten the
dough balls, sealing carefully. Melt a little ghee
in a pan and fry the balls until golden brown.
