Desserts and Sweets Recipes - Rabarhi

Ingredients

  • 1.2l/2 pts milk

  • 50g/2 oz sugar

  • 5ml/1 tsp kewra or rose water

  • 5ml/1 tsp ground cardamom

  • 15ml/1 tbsp chopped almonds

  • 15ml/1 tbsp chopped pistachios


Method:

  1. Bring the milk to the boil then simmer slowly for at least 2 hours, stirring frequently and letting the cream thicken at the edges of the pan.

  2. Add the sugar and stir until the milk is less than a quarter of the original amount. Scrape the cream back into the milk.

  3. Stir in the kewra or rose water and pour into a glass dish. Garnish with cardamom, almonds and pistachios and serve hot or chilled.
