Desserts and Sweets Recipes - Semolina Halwa

Ingredients

  • 100g/4 oz semolina

  • 100ml/3 1/2 fl oz ghee

  • 25g/1 oz gram flour

  • 500ml/17 fl oz water

  • 100g/4 oz sugar

  • 50g/2 oz sultanas

  • 25g/1 oz blanched almonds, halved

  • 25g/1 oz cashew nuts, halved

  • 25g/1 oz pistachios, halved

  • 5ml/1 tsp ground cardamom


Method:

  1. Cook the semolina in a pan over a low heat for 1 minute. Stir in the ghee and flour, increase the heat to medium-low and stir continuously until golden brown.

  2. Add the water and sugar and stir until the water has been absorbed and the ghee appears on the surface of the mixture.

  3. Mix in the nuts and cardamom and cook for a further 3 minutes. Serve hot as a dessert or at breakfast with pakora.
