Ingredients

  • 150g/6 oz semolina

  • 100g/4 oz ghee

  • 275g/10 oz sugar

  • 5ml/1 tsp ground cardamom

  • 30ml/2 tbsp cashew nuts, chopped

  • 30ml/2 tsp raisins


Method:

  1. Toast the semolina in 30ml/2 tbsp of the ghee in a heavy-based pan until light golden. Stir in the sugar and cardamom.

  2. Heat the remaining ghee and fry the cashew nuts and raisins for 2 minutes.

  3. Add the semolina mixture and stir over a low heat until very thick. Shape into balls.
