Semolina Pudding
Ingredients

60ml/4 tbsp ghee
-
100g/4 oz semolina
-
300ml/1/2 pt boiling water
-
275g/10 oz sugar
-
5ml/1 tsp ground cardamom
-
few saffron strands
-
15ml/1 tbsp raisins
-
25g/1 oz cashew nuts,
halved
Method:
-
Heat 45ml/3 tbsp of the ghee
and fry the semolina until golden. Add the hot water
and simmer for 2 minutes.

Add the sugar, cardamom
and saffron and simmer until all the ingredients are
well blended.

Heat the remaining ghee and fry the
raisins and nuts for 2 minutes. Stir into the
pudding and serve hot.
