Ingredients

  • 60ml/4 tbsp ghee

  • 100g/4 oz semolina

  • 300ml/1/2 pt boiling water

  • 275g/10 oz sugar

  • 5ml/1 tsp ground cardamom

  • few saffron strands

  • 15ml/1 tbsp raisins

  • 25g/1 oz cashew nuts, halved


Method:

  1. Heat 45ml/3 tbsp of the ghee and fry the semolina until golden. Add the hot water and simmer for 2 minutes.

  2. Add the sugar, cardamom and saffron and simmer until all the ingredients are well blended.

  3. Heat the remaining ghee and fry the raisins and nuts for 2 minutes. Stir into the pudding and serve hot.
