Desserts and Sweets Recipes - Seviyan

Ingredients

  • 100g/4 oz fine vermicelli

  • 2.5ml/1/2 tsp saffron strands

  • 500ml/17 fl oz milk

  • 50g/2 oz margarine

  • 150g/6 oz sugar

  • 25g/1 oz flaked almonds

  • 25g/1 oz raisins

  • 2.5ml/1/2 tsp ground cardamom


Method:

  1. Break the vermicelli into 2.5cm/1 in pieces. Soak the saffron in 60ml/4 tbsp of hot milk for 15 minutes.

  2. Heat the margarine and fry the vermicelli for about 5 minutes until golden brown. Add the milk and bring to the boil, stirring.

  3. Add the saffron milk. Cover and simmer gently for about 8 minutes until the vermicelli is tender, stirring occasionally.

  4. Add the sugar, almonds, raisins and cardamom and stir thoroughly for 1 minute. Serve warm or chilled.
