Seviyan
Ingredients

100g/4 oz fine vermicelli
-
2.5ml/1/2 tsp saffron strands
-
500ml/17 fl oz milk
-
50g/2 oz margarine
-
150g/6 oz sugar
-
25g/1 oz flaked almonds
-
25g/1 oz raisins
-
2.5ml/1/2 tsp ground cardamom
Method:

Break the vermicelli into
2.5cm/1 in pieces. Soak the saffron in 60ml/4 tbsp
of hot milk for 15 minutes.

Heat the margarine and
fry the vermicelli for about 5 minutes until golden
brown. Add the milk and bring to the boil, stirring.

Add the saffron milk. Cover and
simmer gently for about 8 minutes until the
vermicelli is tender, stirring occasionally.

Add the
sugar, almonds, raisins and cardamom and stir
thoroughly for 1 minute. Serve warm or chilled.
